This 4th, I decided to keep dessert on the lighter side with my Aunt Barb’s fruit pizza, patriotic style. When she would make this for me as a kid, she would usually cover it in a rainbow assortment of fruit, but I am sticking to red, white, and blue today because ‘murica. Making this fruit pizza will help you stay relaxed and patriotic this 4th of July, and isn’t that what we all want?
What you need: only 4 ingredients!
- 1 roll sugar cookie dough
- 1 container Cool Whip
- 8-10 strawberries
- Handful of blueberries
The first step is cooking the sugar cookie dough, which is the base for this recipe. You could make the cookie dough from scratch if you want, but I’m gonna save some time and trust the Harris Teeter brand cookies.
Spread the cookie dough out into a rectangular shape on a cookie sheet. Usually my Aunt would make it circular, but we are making it look like the flag today (hopefully). I also recommend putting down some parchment paper to prevent sticking. Once it’s all spread out, throw it in the oven at 350 for 12-15 minutes.
While the dough is cooking, chop up your fruit (peep my cutting board). Today I am using blueberries and strawberries to cover the fruit pizza. These colors don’t bleed, people. When I decorate the top, I am going to channel some of my fruit layering skills from working at an Acai bowl shop, so it should look pretty.
Once the dough is cooked, let it cool completely so that your whipped cream doesn’t run all over the place. I am taking another short cut and using the almighty Cool Whip. Once again you could make homemade whipped cream if you prefer, but my Aunt always used Cool Whip, so I don’t want to break tradition.
Plop the whip cream on top and spread it out evenly. Decorate with your fruits and viola! You have a dessert that looks like you put a lot of effort into and you can tell people you did (I know I will).
