Duck Fat Fries with Roasted Garlic Aioli

When my brother gave me duck fat as a Christmas gift, I was so excited to try and recreate my favorite duck fat fries from Tattooed Moose here in Charleston. I wrote a love letter to them in this article. Tattooed Moose has hearty and satisfying food perfect for a hangover or just an average day. I wanted to recreate the comfort food that is their duck fat fries with roasted garlic aioli and I think I got pretty close to the real thing! The key was cooking the fries low and slow and then crisping them up at the end in the air fryer!

Ingredients

Equipment needed: Air Fryer


Servings: 2-3

For the duck fat fries:

  • 3 medium size Yukon Gold potatoes (you can also use Russet)
  • 2 tablespoons duck fat
  • Salt and pepper to taste

For the roasted garlic aioli:

  • 1 head of garlic
  • 1/2 cup mayo
  • 1/2 tsp lemon juice
  • Drizzle of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F to roast the garlic.
  2. Chop the top off of the head of garlic, drizzle it with olive oil, and season with salt and pepper.
  3. Wrap the garlic in aluminum foil and roast it for 40 minutes.
  4. While the garlic is roasting, cut your potatoes into fry shapes and preheat your air fryer to 375°F.
  5. After you cut the potatoes, season them in a large bowl with 2 tablespoons duck fat and salt and pepper to taste.
  6. Add the fries into your air fryer basket and cook for 15 minutes at 375°F. After 15 minutes, raise the heat of the air fryer to 400°F and cook for 10 more minutes.
  7. While the fries are cooking, start on your aioli. Simply mix together the entire head of garlic, lemon juice, and mayo.
  8. When the fries come out of the air fryer, season them again with salt and serve on a cutting board for a dramatic presentation.
  9. Dunk the fries into the roasted garlic aioli and enjoy!
