The temperature finally dropped here in Charleston, so I was hankering for a dish that was going to keep me warm and full! I basically threw together a ton of veggies from my fridge and raided the canned goods in my pantry to create this recipe. The result was a satisfying meal that will be a staple in our house now! This turkey chili is perfect for a game day meal or for meal prep.
Ingredients
- 1/2 lb ground turkey
- 1 sweet potato, diced
- 1/2 a yellow onion, diced
- 10 baby carrots, diced
- 1 bell pepper, diced
- 15 oz can black beans
- 14.5 oz can fire roasted tomatoes
- 28 oz can crushed tomatoes
- 1/2 cup chicken stock
- 1 tsp olive oil
Seasonings:
- 1 tsp salt & pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1/4 tsp cumin
Instructions
- Heat the olive oil over medium high heat in a large dutch oven
- Dice up the sweet potato and carrots and put them in the pot before the other veggies because they take the longest to cook.
- Dice the onion and bell pepper and add them in to the pot
- Sauté the veggie mixture for 2 minutes
- Add in all your seasonings and sauté for another 2 minutes
- Add in the ground turkey and brown for 2 minutes
- Once the turkey is brown, add in the crushed tomatoes, fire roasted tomatoes, black beans, and chicken stock.
- Cover the pot and let it simmer for 10 minutes
- Taste for seasonings and serve with your favorite crusty bread or cornbread. Enjoy!
