One Pot Turkey Chili Loaded with Veggies

The temperature finally dropped here in Charleston, so I was hankering for a dish that was going to keep me warm and full! I basically threw together a ton of veggies from my fridge and raided the canned goods in my pantry to create this recipe. The result was a satisfying meal that will be a staple in our house now! This turkey chili is perfect for a game day meal or for meal prep.

Ingredients

  • 1/2 lb ground turkey
  • 1 sweet potato, diced
  • 1/2 a yellow onion, diced
  • 10 baby carrots, diced
  • 1 bell pepper, diced
  • 15 oz can black beans
  • 14.5 oz can fire roasted tomatoes
  • 28 oz can crushed tomatoes
  • 1/2 cup chicken stock
  • 1 tsp olive oil

Seasonings:

  • 1 tsp salt & pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp cumin

Instructions

  1. Heat the olive oil over medium high heat in a large dutch oven
  2. Dice up the sweet potato and carrots and put them in the pot before the other veggies because they take the longest to cook.
  3. Dice the onion and bell pepper and add them in to the pot
  4. Sauté the veggie mixture for 2 minutes
  5. Add in all your seasonings and sauté for another 2 minutes
  6. Add in the ground turkey and brown for 2 minutes
  7. Once the turkey is brown, add in the crushed tomatoes, fire roasted tomatoes, black beans, and chicken stock.
  8. Cover the pot and let it simmer for 10 minutes
  9. Taste for seasonings and serve with your favorite crusty bread or cornbread. Enjoy!
